Diospyros digyna (Black Sapote / Chocolate Pudding Fruit)
An attractive evergreen tree which produces fruit known as 'Chocolate Pudding Fruit'. Fruit can be used as a chocolate substitute in recipes and milkshakes. Fruit can be eaten fresh, is low in fat, and is an excellent source of vitamin C.
When the fruit is unripe, the skin is bright green and shiny. It is not until the skin goes brown that the fruit is ripe and ready to eat. The fruit needs to be perfectly ripe for it to have a good chocolate flavour. If unripe, it will be quite bitter.
Ripe fruit should be cut in half, and contents scooped out. Remove seeds. Ripe fruit (or pulp) can be refridgerated or frozen. To enhance flavour, add a little vanilla, rum, cream or coffee liqueur.
Fruits can be cut in half and covered in passion fruit for a light and easy snack or dessert. In Mexico the pulp is mixed with orange juice or brandy and served with cream.
The Diospyros digyna is related to the Persimmon, and is sometimes also called Black Persimmon.
